Director of the Hôtel du Barry Resort & Spa and head chef, in 2020 Jérémy Lasserre joined the family business supported by his father and mother, Thomas and Nathalie Romero. The three of them transformed the former hostellerie in Sauveterre-de-Comminges into this magnificent ****hotel near Luchon.
After 14 years spent exploring the world and training with Michelin-starred chefs such as Alain Ducasse and Pierre Gagnaire, Jérémy decided to put his know-how and experience at the service of the Hibiscus restaurant.
The chic, subtly colored atmosphere of the dining room provides a unique setting for his gastronomic cuisine, which draws inspiration from the richness of the generous local terroir, but also from his years spent in Asia. He skilfully reinterprets a highly contemporary cuisine that has become a benchmark in the region, guaranteeing unique gastronomic moments in Haute-Garonne.
